Caribbean Macaroni Pie! Simply Delicious…

Caribbean Macaroni Pie! A West Indian staple… Growing up in the Caribbean there was not one church dinner without this dish. It’s the heart of Caribbean comfort food.

I hope you enjoy this recipe as much as I do!

Ingredients
1 Box Pasta (I used Penne)
1 1/2 can evaporated milk
2 TBs butter
1 tsp black pepper
3 Eggs
1/4 tsp cayenne
1/3 onion chopped and sautéed in butter
2 Garlic Cloves
1 Tablespoon Mustard
1 Teaspoon Ketchup
1/2 Teaspoon Garlic powder
1/2 Teaspoon Onion powder
2 Cups of Cheddar cheese

Directions
1. Boil pasta according to instructions on package.
2. In a small bowl mix together milk, eggs, mustard, pepper garlic powder, onion powder, ketchup 1 cup of cheddar, two garlic cloves and pepper.
3. Sautée finely chopped onions in small frying pan until translucent.
4. Mix into Macaroni in pot.
5. Pour in egg mixture and mix together so all pasta is covered.
6. Pour into oil baking pan and bake for 55 minutes at 350 degrees Celcius.
