Ingredients
1 Breadfruit
1 Can of corn (or 3 Boiled ears of corn)
1 Red Bell Pepper
1 Green Bell Pepper
1/2 cup of Mayonnaise
Salt (To Taste)
1. Cut breadfruit into four equal pieces.
2. Place a large pot with water on stove and place breadfruit pieces so they are well covered with water.
3. Bring water to boil and let breadfruit cook until a knife can smoothly slide through each piece.
4. When cooked, turn off stove and remove breadfruit from water. Peel breadfruit.
5. Finely cube bell peppers and breadfruit and add to a large bowl.
6. To the same bowl add corn and Mayo. Salt to your taste.
7. Mix together all ingredients. Serve warm or place in refrigerator for 1 hour to enjoy a cold breadfruit salad.
