Ingredients

1 Ripe Plantain
2 Tablespoons oil for frying
1/4 Teaspoon of Cinnamon
1/2 Teaspoon Brown Sugar
A Pinch of Ginger Powder

Directions:

1.  Peel plantain by cutting the tips of both ends off, making a long slit along the skin using a knife from top to bottom (be careful not to pierce knife to deep to cut the plantain) and remove skin.

2.  Cut plantain in several diagonal slices.

3.  To a frying pan add 2 tablespoons of oil.  Turn on stove and allow oil to heat for about minute.
4.  Place plantain in hot frying pan and  fry until each individual slice is golden brown on each side.
5.  Remove from heat and sprinkle with a little cinnamon powder, sugar and ginger powder to your taste.

I also really enjoy these without any sugar, cinnamon or ginger powder. The natural flavors are so enticingly delicious. Garnish with fresh mint leaves.
