Pig foot Souse Recipe

I love souse! I remember eating this almost every Saturday whilst I lived on the beautiful Northern side of Dominica where a historical Fort is located (Oh the view is just lovely there). Every Saturday morning “Summer” a family friend would make this dish and bring it to our house. I always looked forward to having it for breakfast. I also learned to make it at a very young age.

The marinade made by adding the ingredients used in this recipe together create a bit of a pickled twist to this dish. If you like pepper you could add either some ground Black Pepper, a whole Scotch Bonnet or a Habanero pepper (be sure not cut open as the heat may be too much to handle).

You can enjoy this with a lite refreshing drink like grapefruit or even passion fruit juice although by the time you have eaten it all up and sapped up all the souse juices from your bowl, you will have no more room for a drink.  I hope you enjoy this recipe.


Pig Foot Souse Recipe

Ingredients

8 lbs of  Pig Feet
1 Whole Onion
1 Cucumber
1/2 Cup of Green Onion (Chopped)
1 Teaspoon of Salt (and salt to taste)
1 Whole Lime
1 Garlic Clove (crushed)
Hot Pepper (Scotch Bonnet/Habanero) or Ground Black Pepper

Directions
1.  Remove Pig Feet from the package and rinse with tape water.
2.  In a large pot add enough water to cover pig feet. Add a teaspoon of salt and boil for 60 minutes.
3.  After 60 minutes remove from heat. In a large bowl add about 5 cups of water. To bowl add sliced cucumber, chopped onions,  Garlic, green onions, Pepper and salt to taste.
4.   Squeeze lime, cover bowl and let it marinate for at least 60 minutes or more. 
Tip:   The more it sits in the Marinade the better the taste.
