Roasted Chicken

Recently I have been all about Pinterest… I came across this wonderful yet simple roasted chicken recipe from alwaysbutter.com.  This recipe reminds me so much about visiting my grandmother in the country side of Dominica. She would make the most wonderful chicken with a wood roasted, outdoorsy flavor..hmm. Good times!  So I decided to try this recipe.  It was so good that this one has to be part of my recipe regulars. Check it out!
 

Ingredients:
  
1 whole chicken (broken down into 8 pieces)
2 tbsp soy sauce
1 tbsp light brown sugar
2 tbsp red wine vinegar
3 tbsp olive oil
4 shallots, chopped
2 cloves of garlic, minced
Some fresh parsley (to garnish)
Pinch of salt and pepper (to your taste)

Directions:

1.   Preheat oven to 425 degrees C (220) and prepare a baking dish by greasing (preferably using light cooking spray).

2.  Mix together all ingredients for marinade in a medium bowl (Soy sauce, Brown sugar, Red wine vinegar, Olive oil, Shallots, Garlic and salt and pepper).

3.  Toss chicken in marinade and let sit for 10 minutes so seasoning can work through the chicken pieces (this will intensify the deliciousness).

4.  Assemble the chicken pieces side by side in baking dish making sure the skin side is up.

5.  Let chicken pieces bake/roast for 30 minutes until they start to brown. 

6.  After 30 minutes remove baking dish from oven and baste the skin again with some of the remainder of the marinade then flip chicken pieces and baste with the rest of the marinade.

7.  Let bake for 10 more minutes or until chicken is cooked.

8.  Garnish with lots of fresh parsley.
