Rice and Okra (aka Okro in the Caribbean)

My mom grew up eating this with codfish but I decided to try it with bacon instead which also adds a ton of  flavor.


Ingredients

2 cups of rice
4 slices turkey or pork bacon finely chopped
4 cups of water
1 1/2 cups okra (sliced)
1 tsp salt
1/2 tsp onion seasoning
1/2 tsp garlic seasoning
1 pack sazon seasoning
1 Tbsp butter
1/2 tsp of oil

1.  Fry bacon in a pot with a 1/2 teaspoon of oil until crispy.
2.  Remove from pot and drain.
3.  In the same pot add 1Tbsp of butter  the add sliced okra.
4.  Stir fry okra for about 2 to 3 minutes then add onion and garlic seasoning and then bacon.
5.  Continue to stir fry for 1 minute.
6.  Add rice and water and bring to boil.
7.  Lower heat and cover pot.  Cook for 25 to 30 minutes.
8.  Serve with stewed chicken or beef.
