Here’s a really cool rice recipe that is reflective of the Caribbean in taste and color vibrancy. I call it the “Island Rice.” Its really easy to make and very tasty!! Here’s the recipe:
Ingredients
1 can of pigeon peas (or 1 cup of fresh pigeon peas)
1 1/2 cups of brown rice
1 pack of Sazon seasoning
1 large red bell pepper
3 stalks of finely chopped scallions
2 teaspoons of salt (add salt to taste)
Boullion seasoning
3 tablespoons of vegetable oil
Directions
- 1. Boil rice in water with 1 teaspoon of salt until cooked. Drain excess water using a collander.
- 2. In a large frying pan pour vegetable oil. Heat oil until simmering then add rice and boullion seasoning. Stir for 1 minute.
- 3. Then add 1 tsp of salt (or salt to your taste), scallion, pigeon peas and red bell pepper. Continue to stir for 2 minutes.
- 4. Add 1 pack of sazon seasoning and stir for another 2 minutes.
- 5. Turn off stove and serve.
