Mango-Cinnamon Cobbler! Yummm!

I am so excited about this mango cobbler. I made it for the first time and it was great!  Its the sole inspiration for my blog. I figured since I love mixing Caribbean and American foods in cooking and baking, I might as well blog about it.

To make this Mango-Cinnamon Cobbler I used a peach cobbler recipe from http://allrecipes.com/recipe/southern-peach-cobbler-2/detail.aspx and improvised a little. This recipe is so simple and super fun.  So here it goes. This is my new recipe:


Ingredients

FILLING

    • 4 Large Ripe Mangoes – peeled and diced
    • 1/4 cup white sugar
    • 1/4 cup brown sugar
    • 1/4 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
    • 1 teaspoon fresh lemon/lime juice
    • 5 teaspoons cornstarch       

TOPPING
   

    • 1 box of jiffy pie crust mix (or 1 can of jumbo butter biscuit dough)
    • 1/4 cup white sugar
  • 1/4 cup brown sugar

MIX TOGETHER

    • 3 tablespoons white sugar
    • 1 teaspoon ground cinnamon

 

Directions

1.   Preheat oven to 425 degrees F
2. Combine mango, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch in a large bowl.
3.  Mix together in a baking dish.
4.  If you are using biscuit dough add sugar, pinch into small pieces and spread over the top of your filling. If you are using the Jiffy pie crust filling, follow directions on box add sugar and spread over the top in small pieces.     
5.  Sprinkle sugar and cinnamon over the topping.
6.  Bake for about 30 minutes or until golden brown at 425 degrees F.
The result should be a super delishhhh Cobbler like the one in my picture. Please write your comments and recommendations. I am open to new ideas.
