If you’ve traveled to the Caribbean and have had a chance to eat some of the wonderful dishes you may realize that alot of the sauces used in cooking are tomato based, especially on the island of Dominica. As a matter of fact, tomato ketchup is used in a lot of the authentic island dishes as a seasoning. I remember when my mom would make a baked chicken seasoning sauce she would chop onions and sweet peppers and mix them with mustard, tomato ketchup, soy sauce and salt. She would rub the sauce into the chicken and leave it for a couple of hours to marinate.
She would let the chicken sit in seasonings overnight and then bake it in the morning. I remember eating baked chicken for lunch after church almost every Sunday. The wonderful sauce mixture all over the chicken added such a lovely sweet tomato flavor. It was so savory and delicious and paired well with other Caribbean sides like Caribbean style Mac and Cheese and
Potato Salad.
I decided to put a little twist on my mom’s recipe. I did not let the chicken marinate in the sauce but instead I used the sauce as a topping and it was oh so tasty. The distinct flavor of tomatoes in the sauce allowed the hints of orange sauce and teriyaki marinade flavors to sip through. These ingredients complemented each other beautifully.
I have many more memories of going on field trips with my class in primary school where parents would pack lunch for their children to eat and I could almost guarantee that tomato ketchup was used somewhere in their meal. These are such warm memories.

I used a mixture of tomato ketchup, honey, orange sauce as the main ingredients for sauce to top my chicken. Hope you enjoy it.
Ingredients
4 Chicken Breasts (with or without bones at room temperature)
1 Sprig Rosemary (remove leaves)
1/4 Cup Finely Chopped Chives
1/4 Cup Tomato Ketchup
1 Tablespoon Honey
2 Tablespoons Orange sauce
1/4 Teaspoon Salt
1/2 Tablespoon Hot Sauce
1 Tablespoon Black Pepper
1 Tablespoon Teriyaki Marinade Sauce
Directions:
1. Season Chicken breast in a large bowl with seasoning salt. Set aside while preparing sauce.
2. To prepare sauce mix together rosemary, chopped chives, ketchup, honey. orange sauce, salt, hot sauce and teriyaki marinade sauce. Set aside until time to spread over chicken.
3. Set chicken out in baking dish and sprinkle with black pepper.
4. Place Chicken in oven at 350 about 45 minutes or until it starts to look slightly golden.
5. Remove Chicken from oven and cover with sauce all over the top.
6. Put oven on broil and place chicken back into the oven for 10 minutes.
Serve with rice or vegetables and Enjoy MN!
